Upside down peach cake

I must say I'm a lucky mom. YK likes to bake and he's good at it. Tonight he made an upside down peach cake quite effortlessly and it was so delicious, we lost a quarter to our greedy dog who hopped onto the coffee table and gobbled when we weren't watching.

It's quite easy to make. If you have peaches growing in your backyard, you'll save a bundle. Peaches are  expensive here but still, the delicious result is worth every cent.

Ingredients:
1 cup plain flour shifted with 1 teaspoon baking powder
100g butter
1 teaspoon vanilla essence
2 eggs
1/2 cup sugar
1/2 cup sour cream
lemon zest

5 fresh peaches
1/2 cup sugar + 1/4 cup water

Method:
1. Cream 1/2 cup sugar with butter till fluffy.
2. Add eggs and beat until smooth. Stir in vanilla essence.
3. Add in lemon zest and flour.
4. Stir in sour cream.
5. Heat up pan and add in 1/2 cup sugar and water until caramalised.
6. Cut peaches into slices and lay them at the bottom of a casserole dish.
7. Pour caramel over peach slices.
8. Pour batter over the peach slices. Bake in preheated oven at 200 degree celcius for about 40 minutes.

Peach is expensive here too! May be I can use pineapple! hahahha...

Malar, actually you can. The original recipe is for fresh prunes which is not available during this time of the year. I imagine it'll work with pear also.

Thanks for the recipe! I'm mastering desserts at the mo, making a strawberry cheese cake on Sunday for our guests. But I'd like to try this one.
Glad the greedy dog enjoyed it and didn't eat it all!

I cant do that peach cake ! But aunty ML will invest in him if he ventures into bakery, or runs nature activities for a living :)

Wen-ai - You should have seen the guilty look on his face. He scrambled away and ran to the patio when he saw me coming. He knew I was angry after I punished him for dragging out the leftover food in the dustbin. But after all that, he is still greedy.
