After eating the delicious glass noodle salad at Lerk Thai that day, I have been recreating the dish at home. This is perfect for someone on a low-carb diet because glass noodle is made from mung bean. It is also gluten free.

Ingredients:
Bunch of glass noodles
Few fresh shrimps (shelled) & sliced squid
Minced meat (chicken, pork or beef)
Fresh tomato (sliced)
Fresh chilli (chopped)
Shallots (sliced)
Garlic (minced)
Coriander (chopped)
Dressing: 2 tablespoon fish sauce, 3 tablespoon lime juice, 1 teaspoon sugar
Method:
1. Bring a small pot of water to boil.
2. Blanch the minced meat and break up the clumps. Remove.
3. Blanch the prawn and squid till cooked. Remove
4. Blanch the glass noodles for about 3 to 5 minutes until soft.
5. Mix all the ingredients together in a bowl.
6. Pour dressing, mix and serve.
