I was lounging in my cosy chair with the Sunday papers when the kids asked about dinner. Making an elaborate dinner was the last thing on my mind.
Sundays are perfect days for fuss free cooking. I trotted into the kitchen reluctantly. The plan was to make the fastest meal that will go down well with everyone. That's when I remembered the Asian style Paella recipe.
I had all the ingredients (lemongrass, shallots, garlic, rice, fresh prawns, fish sauce, chilli padi, chicken stock cube and soy sauce) except for mussells. I added in lots of fresh button mushrooms and young sweetcorn instead to make a healthier dish.

The aroma from the paella and drumlets was quite intoxicating, Rusty was drooling under the dining table.
The dishes were ready so quickly, the kids didn't have to wait very long. Dinner was also over very quickly. It's a fuss-free dinner afterall.

That's so neat that you can make such fuss-free meals! I don't have such a repetoire... LOL... we also had a lazy Sunday, so we bought some bits at the supermarket on the way home! Not only is Rusty drooling.. I was as well after looking at all those delicious pics!
Oh man, those chicken drumlets look yummy to the max!
JY- Actually I have to strategise ahead in order to make easy meals later on. I marinate all the chicken before packing them off into the freezer because I know I don't have time to defrost and marinate on weekdays.
Sometimes I cook extra rice so that I can make fried rice the next day. And I usually keep some salmon or cod fillets in the freezer. When I return home late, I grill them in the oven and drizzle with teriyaki sauce before serving with rice. They're alot healthier than frozen dinners or take-outs.
Nick - Haha,I know you like chicken but cannot stand prawns!!
Oh, you can make the drumlets easily. The curry powder makes the meat very tasty!
if only me mom is as creative, or allow us kids in the kitchen + open to new taste. =(
Fry - I think your mum is worried that you'll mess up the kitchen.
My kids often cook all kinds of stuff at night when I am asleep. I'm happy they can feed themselves without bothering me!
You call them fuss-free? WOW!!! I can't believe you have so much stock of ingredients at home he he he...I can almost smell them from here...sigh...too bad it's SO hard to find fresh seafood here...sob sob...
Amel - I go to the market on Sundays to get fresh food for the rest of the week, so it's the day I am most well stocked.
You can use frozen prawns as well. I'm sure the paella will taste just as good. In fact, you can add frozen peas and beans to the dish too.
Wow! You make difficult look so easy!
Ting,
You should set one day as a Free-Mummy Day every week. No cooking. No housework.
Just chill out :-)
The food look so yummy! I'm hungry now!
Petunia - 'Easy' is relative cos it is easy compared to a 5-course meal!
Water - Yes, a 'set mummy free' day!
I don't cook on Saturdays cos we eat at my parent's place. Friday nights also, cos it is my pak tor day.
Malar - The photos also look tasty. Don't be deceived!
The drumlets remind me of what i had when staying with a friend in Melbourne. Her niece has everything marinated in the fridge and then tossed into the oven to cook, while we drank n gossip. I wld prefer mid-wings tho! Will make some in the next few dys as yr pix has started me drooling n longing!
Btw, like yr new blog design!
Auntie Lucia - Actually midwings are better for grilling but I couldn't find any that day.
Thanks. I like how fresh the new template looks!
