Joy in every bite



Though I've heard so much about Bengawan Solo's pandan chiffon cake, for some reason, I never tasted one till today. Each time I walk into their cake shop, I'm confronted by a huge variety of mouth watering kuehs and cream cakes, the humble chiffon simply gets sidelined.

While I was at the mall this morning, I decided today is the day I'll eat this light (not sinful) sponge cake for lunch.
I took one bite and found the answer to why people rave so much about this humble cake. I have heard stories of how tourists lug boxes home with them. Chiffon cake is mostly air but Bengawan Solo's chiffon cake is in a class of its own.

Almost every cake shop in Singapore sells pandan chiffon. I've tasted many different types but instead of the garden variety (usually very dry ones) that I'm so used to, Bengawan Solo's version is moist with a slightly chewy texture. A nice fresh coconut fragrance wafts out as my teeth sink into the wonderfully soft sponge that's bursting with flavour. I even detect a tinge of saltiness which brings out the best in this sweet delightful cake.

What a joy in every bite! I should have bought more.

I love pandan cakes from Bengawan too. Light and guiltfree as I sink my teeth into them.
