Amazing race

It's Friday, my nightout with CH. It's also YK's math tuition night, which calls for an early and quick dinner. I wanted to buy a small honey roasted chicken from the roasterie initially but decided to swing by the supermarket nearby to get a fresh one instead. At least I can make something more substantial with that.

3.30pm - Leave my office.

3.40pm - First stop. The neighbourhood supermarket. Grab chicken and run out of the store.

3.45pm - Enter kitchen. Cut chicken to pieces. Remove chicken skin! Season with salt and curry powder. While chicken pieces are marinating, chop onion and heat some oil in frying pan.


Fry onions, chilli and curry paste till fragrant before adding in chicken. While chicken pieces are being browned, chop some tomatoes, potatoes and boil water to make coffee.


Stir in potato and tomato chunks. Make a cup of coffee.

Stir the mixture until evenly coated with curry paste.

Add water and bring to boil. Meanwhile, clean up stove, wash dishes and mop floor.

Transfer everything into a heavy based pot. Let it simmer on low heat for about 45 minutes.

4.15pm - Coffee break. Enjoy peanut cookies with black kopi-O and delicious smell of Indian curry chicken wafting through the house.

This is a healthier version of curry made without using any coconut milk. I call it the Indian curry because the boys' previous tuition teacher Mrs Raja, who is an old Indian lady, used to make a pot of curry like this for me to bring home. She had lots and lots of students but for some reason, I was given special treatment. Only I get to lug big pots of chicken curry home.

When the dish is done, the stock will be infused with the sweet taste of tomato and chicken. It is simply heavenly when eaten with hot steaming rice.

Talking about heavenly, CH and I are planning to have dinner at the old KTM Railway Station. I love the place simply because going there is like traveling back in time. The building is colonial like and kind of laid back. I'll see if I can take some photos. After that, we're planning on walking to an ice-cream parlour called 7th Heaven which sells sinfully rich, liquor infused ice cream. I can't wait!
